Description

A delightful treat that combines the wholesome goodness of oats with the sweet, tangy flavors of fresh or frozen berries, perfect for breakfast, snacks, or as a light dessert.


Ingredients

  • 2 cups rolled oats
  • 1 cup mixed berries (fresh or frozen)
  • 1/4 cup honey or maple syrup
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, almond flour, cinnamon, and salt.
  3. In another bowl, mix melted coconut oil, honey (or maple syrup), and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Press half of the mixture into the bottom of muffin cups to form a solid crust.
  6. Layer the mixed berries over the crust.
  7. Sprinkle the remaining oat mixture over the berries.
  8. Bake for 20-25 minutes, until golden brown.
  9. Allow to cool before serving.
