Ingredients

  • 1 cup cooked quinoa or rice
  • 1 can black beans (rinsed and drained)
  • 1 cup vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. In a large mixing bowl, combine chopped vegetables, cooked quinoa or rice, black beans, dried thyme, and dried rosemary. Season with salt and pepper.
  3. Stir in vegetable broth to moisten the mixture. Transfer to the greased baking dish, sprinkle cheese on top if desired, and drizzle with olive oil.
  4. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until vegetables are tender and top is golden.
