Description

A delicious blend of creamy flavors and zesty spices, this Crock Pot Creamy Cajun Chicken Pasta is perfect for busy weeknights.


Ingredients

  • 1 pound of chicken breasts
  • 8 ounces of pasta (penne or rotini)
  • 1 cup of heavy cream
  • 1 cup of chicken broth
  • 1 cup of diced tomatoes
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 teaspoons of Cajun seasoning
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Chopped parsley for garnish

Instructions

  1. Place the chicken breasts in the bottom of the Crock Pot.
  2. Add the diced onion, minced garlic, diced tomatoes, chopped bell pepper, chicken broth, and Cajun seasoning on top of the chicken.
  3. Cook on low for 4-6 hours or until the chicken is cooked through and tender.
  4. Shred the chicken in the pot using two forks. Stir in the heavy cream and pasta. Cover and cook for an additional 30 minutes, or until the pasta is tender. Season with salt and pepper to taste. Serve hot, topped with grated Parmesan cheese and chopped parsley.

Notes

Serve with garlic bread and a fresh salad. Leftovers can be stored in the refrigerator for up to 3 days.
