- Step 1: Preheat and Prepare
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with non-stick cooking spray. Use paper towels to pat the cod fillets completely dry. This is a crucial step to ensure the crust sticks and doesn’t become soggy.
- Step 2: Create the Parmesan Topping
In a medium mixing bowl, combine the Panko breadcrumbs, grated Parmesan cheese, chopped parsley, garlic powder, paprika, salt, pepper, and lemon zest. Stir in the melted butter until the mixture looks like coarse, damp sand and the breadcrumbs are evenly coated.
