- 200g halloumi cheese
- 1 cup quinoa
- 2 cups water or vegetable broth
- 2 tablespoons olive oil
- 1 tablespoon hot honey
- Salt to taste
- Pepper to taste
- 1 cup mixed salad greens
- Cherry tomatoes, halved
- Cucumber, diced
- Fresh herbs (like parsley or mint) for garnish
Instructions
- Rinse the quinoa under cold water. In a saucepan, combine the rinsed quinoa and water (or broth). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid has been absorbed.
- Slice the halloumi cheese into thick slices.
- Heat olive oil over medium heat in a non-stick skillet. Once hot, add the halloumi slices and cook until golden brown and crispy on both sides, for about 2-3 minutes per side.
- Drizzle the hot honey over the halloumi cheese in the pan, allowing it to caramelize slightly for about one minute.
- Assemble the bowl by layering cooked quinoa, mixed salad greens, cherry tomatoes, and diced cucumber. Top with crispy halloumi slices.
- Garnish with fresh herbs, a sprinkle of salt and pepper to taste, and serve warm.
Notes
This dish can be enjoyed on its own or paired with crusty bread. Store components separately for freshness.
