Description

A delightful bowl combining crispy halloumi cheese and wholesome quinoa, topped with hot honey for a touch of sweetness.


Ingredients

  • 200g halloumi cheese
  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 2 tablespoons olive oil
  • 1 tablespoon hot honey
  • Salt to taste
  • Pepper to taste
  • 1 cup mixed salad greens
  • Cherry tomatoes, halved
  • Cucumber, diced
  • Fresh herbs (like parsley or mint) for garnish

Instructions

  1. Rinse the quinoa under cold water. In a saucepan, combine the rinsed quinoa and water (or broth). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid has been absorbed.
  2. Slice the halloumi cheese into thick slices.
  3. Heat olive oil over medium heat in a non-stick skillet. Once hot, add the halloumi slices and cook until golden brown and crispy on both sides, for about 2-3 minutes per side.
  4. Drizzle the hot honey over the halloumi cheese in the pan, allowing it to caramelize slightly for about one minute.
  5. Assemble the bowl by layering cooked quinoa, mixed salad greens, cherry tomatoes, and diced cucumber. Top with crispy halloumi slices.
  6. Garnish with fresh herbs, a sprinkle of salt and pepper to taste, and serve warm.
