Description

Delightful baked zucchini fries with a satisfying crunch on the outside and tender goodness on the inside, perfect as a snack or side dish.


Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray or olive oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut zucchinis into fry-shaped sticks.
  3. In a bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini stick in the beaten eggs, then roll in the breadcrumb mixture.
  6. Place coated zucchini fries on a baking sheet lined with parchment paper.
  7. Spray lightly with cooking spray or drizzle with olive oil.
  8. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
