Description

A delightful dish that combines crispy gnocchi with fresh spinach and tangy feta cheese, perfect for any occasion.

Ingredients

Scale
  • 1 pound gnocchi
  • 2 tablespoons olive oil
  • 3 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the gnocchi according to package instructions until they float to the top. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the cooked gnocchi and cook until crisp and golden brown on all sides, about 5-7 minutes.
  3. Add minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  5. Remove from heat and stir in the crumbled feta cheese. Season with salt, pepper, and red pepper flakes if desired. Serve warm.

Notes

Serve warm garnished with extra feta and olive oil. Pairs well with a side salad or steamed vegetables.
