- 1 lb Chicken breasts
- 1/2 cup Cornstarch
- 1 tsp Salt
- 1/2 tsp Pepper
- 1/4 cup Hot honey (or honey with chili flakes)
- 2 Cucumbers
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
- 1/4 cup Fresh herbs (e.g., parsley or dill)
- 2 cups Rice (white or brown)
Instructions
- Start by cooking your rice according to package instructions. Usually, this involves rinsing the rice before boiling it in water until it’s fluffy and tender. Set aside once cooked.
- In a bowl, coat chicken breasts in cornstarch, salt, and pepper. Ensure the chicken is evenly covered.
- Heat olive oil in a pan over medium-high heat. Fry the chicken breasts until they are crispy and cooked through, about 4-5 minutes per side.
- Once the chicken is cooked, drizzle hot honey over it and toss to coat evenly.
- For the cucumber salad, slice cucumbers thinly. Toss them with olive oil, lemon juice, and your choice of fresh herbs.
- To serve, place a generous scoop of rice at the bottom of each bowl, top with the crispy hot honey chicken, and serve the cucumber salad on the side.
Notes
For extra crunch, double fry the chicken. Adjust the heat level with more or less hot honey. Let chicken rest after frying for juiciness.
