Description

Ingredients

  • 8 oz orzo pasta
  • 2 salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook orzo pasta according to package instructions and set aside.
  2. Heat olive oil over medium heat, season salmon with salt and pepper, and cook for 4-5 minutes on each side. Remove and flake into bite-sized pieces.
  3. Add minced garlic and sauté for 1 minute until fragrant. Then, add cherry tomatoes and spinach until the spinach wilts.
  4. Pour in heavy cream and simmer gently. Stir in Parmesan cheese until melted and smooth.
  5. Mix cooked orzo and flaked salmon into the creamy sauce, season with salt and pepper, and stir to combine.
  6. Serve warm, garnished with fresh basil.
