- 8 oz orzo pasta
- 2 salmon fillets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook orzo pasta according to package instructions and set aside.
- Heat olive oil over medium heat, season salmon with salt and pepper, and cook for 4-5 minutes on each side. Remove and flake into bite-sized pieces.
- Add minced garlic and sauté for 1 minute until fragrant. Then, add cherry tomatoes and spinach until the spinach wilts.
- Pour in heavy cream and simmer gently. Stir in Parmesan cheese until melted and smooth.
- Mix cooked orzo and flaked salmon into the creamy sauce, season with salt and pepper, and stir to combine.
- Serve warm, garnished with fresh basil.
