- 1 cup dried black-eyed peas
- 4 cups vegetable broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 smoked ham hock or 1/2 cup diced ham (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- Chopped green onions for garnish
Instructions
- Rinse the black-eyed peas under cool water and remove any debris.
- In the Instant Pot, add the drained peas, vegetable broth, diced onion, minced garlic, ham hock (if using), salt, pepper, and paprika. Stir well to combine all ingredients.
- Close the lid securely and set the Instant Pot to high pressure for 15 minutes. For stovetop, sauté the onion and garlic in olive oil until translucent, then add the remaining ingredients and bring to a boil; reduce heat and simmer for 45 minutes to 1 hour.
- Once cooked, allow the pressure to release naturally for 10 minutes before performing a quick release. Stir in the heavy cream and olive oil, adjusting seasoning as needed. Garnish with chopped green onions before serving.
Notes
Soaking the black-eyed peas for a few hours can reduce cooking time and improve texture. Customize seasonings as desired.
