- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1/2 cup milk
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a large pot, heat a splash of oil over medium heat. Add the chopped onions and minced garlic, sautéing until they become soft and fragrant, about 3-5 minutes.
- Add the diced potatoes and pour in the broth; bring the mixture to a boil. Once boiling, reduce the heat to a simmer. Let the potatoes cook until they are tender, around 15-20 minutes.
- Carefully blend the soup until it reaches a smooth consistency using an immersion blender or a regular blender. Return the blended soup to the pot.
- Stir in the heavy cream and milk for that rich, creamy texture. Season the soup with salt and pepper to taste, ensuring the flavors are well balanced. Serve hot, garnished with fresh cilantro and lime wedges on the side.
Notes
For a richer flavor, consider roasting the potatoes before adding them to the pot. Adjust the thickness of your soup by adding more or less broth depending on your preference.
