- 1 lb chicken breast
- 1 can coconut milk
- 2 limes (juiced and zested)
- 2 cloves garlic (minced)
- 1 onion (chopped)
- 1 bell pepper (sliced)
- Salt and pepper to taste
- Fresh cilantro for garnish
- Olive oil
Instructions
- Heat olive oil in a large pan over medium heat.
- Add the chopped onion and sliced bell pepper to the pan, and sauté until they are soft and fragrant, about 5 minutes.
- Next, add the minced garlic and cook for another minute, stirring constantly to avoid burning.
- Push the vegetables to the side of the pan and place the chicken breasts in the center. Brown them on both sides, about 4-5 minutes each.
- Once the chicken is golden, pour in the coconut milk along with the lime juice and lime zest. Stir well to combine all the flavors.
- Season the dish with salt and pepper, adjusting to your taste.
- Cover the pan and let it simmer for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Garnish the dish with fresh cilantro and serve hot.
Notes
For added depth of flavor, marinate the chicken in lime juice and garlic for an hour before cooking. Use boneless, skinless chicken thighs for a juicier option.
