- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 4 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup fresh cranberries
- 1/4 cup orange juice
- 1 tablespoon orange zest
Instructions
- Preheat the oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture firmly into the bottom of a springform pan.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth and creamy. Add the vanilla extract and mix well.
- Add eggs one at a time, mixing well after each addition.
- Fold in fresh cranberries, orange juice, and orange zest gently.
- Pour the cream cheese mixture over the crust and smooth it out.
- Bake for 60 minutes or until the center is set.
- Allow to cool at room temperature and then refrigerate for at least 4 hours or overnight before serving.
Notes
For best results, ensure cream cheese is at room temperature before mixing. Can substitute orange juice with lemon juice for a different flavor.
