- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda

- 1 cup rolled oats
- 1 cup chocolate chips
- 1 cup chopped pecans or walnuts
- 1/2 cup shredded coconut
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then mix in the vanilla extract.
- In another bowl, whisk together flour, baking soda, and salt; gradually add to the wet mixture, mixing until just combined.
- Fold in rolled oats, chocolate chips, nuts, and shredded coconut.
- Scoop rounded tablespoons of dough onto ungreased baking sheets, leaving space between them.
- Bake for 10-12 minutes or until edges are golden brown.
- Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
Store in an airtight container for up to a week or freeze for up to 3 months. Great with vanilla ice cream or a cup of coffee.
