- 1 cup low-fat or full-fat cottage cheese (small curd preferred)
- 2–3 tablespoons yellow mustard
- 1 chicken apple sausage (pre-cooked)
- 2 large carrots, peeled and cut into sticks
- 3 stalks of celery, cut into sticks
- 1/2 cup cucumber slices
- 4–5 hearts of palm stalks
- 4–5 radishes, halved
- Optional: 1/2 an avocado or a handful of cherry tomatoes
Instructions
- Wash all your fresh produce thoroughly under cold water. Peel the carrots and slice them into manageable sticks. Cut the celery and cucumbers into bite-sized pieces. If you are using hearts of palm, drain them from the jar and pat them dry so the mustard sticks better.
- While you can eat chicken apple sausage cold, it tastes best when warmed through. You can either microwave the sausage for 45 seconds or quickly sear it in a non-stick skillet over medium heat for 3-5 minutes until the skin is slightly crispy. Once heated, slice it into rounds or leave it whole.
- Find a large plate or meal prep container. Place a generous scoop of cottage cheese on one side of the plate. Squirt a large amount of yellow mustard directly onto the cottage cheese or right next to it. Some people prefer to mix them together into a “pinkish-orange” dip, while others prefer to dip into them separately.
- Arrange your colorful vegetables and the sliced sausage around the dipping section. Add any optional extras like avocado or radishes to fill the gaps. Your viral-inspired meal is now ready to enjoy!
