  • 1 cup low-fat or full-fat cottage cheese (small curd preferred)
  • 23 tablespoons yellow mustard
  • 1 chicken apple sausage (pre-cooked)
  • 2 large carrots, peeled and cut into sticks
  • 3 stalks of celery, cut into sticks
  • 1/2 cup cucumber slices
  • 45 hearts of palm stalks
  • 45 radishes, halved
  • Optional: 1/2 an avocado or a handful of cherry tomatoes

Instructions

  1. Wash all your fresh produce thoroughly under cold water. Peel the carrots and slice them into manageable sticks. Cut the celery and cucumbers into bite-sized pieces. If you are using hearts of palm, drain them from the jar and pat them dry so the mustard sticks better.
  2. While you can eat chicken apple sausage cold, it tastes best when warmed through. You can either microwave the sausage for 45 seconds or quickly sear it in a non-stick skillet over medium heat for 3-5 minutes until the skin is slightly crispy. Once heated, slice it into rounds or leave it whole.
  3. Find a large plate or meal prep container. Place a generous scoop of cottage cheese on one side of the plate. Squirt a large amount of yellow mustard directly onto the cottage cheese or right next to it. Some people prefer to mix them together into a “pinkish-orange” dip, while others prefer to dip into them separately.
  4. Arrange your colorful vegetables and the sliced sausage around the dipping section. Add any optional extras like avocado or radishes to fill the gaps. Your viral-inspired meal is now ready to enjoy!
