  • 2 large eggs
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup pizza sauce (no sugar added)
  • 1/2 cup shredded mozzarella cheese
  • Fresh basil leaves (optional)
  • Your choice of toppings (pepperoni, bell peppers, mushrooms, etc.)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with high-quality parchment paper. This is a crucial step to ensure the flatbread does not stick to the pan during the baking process.
  2. In a blender or food processor, combine the cottage cheese, eggs, Italian seasoning, garlic powder, and onion powder. Blend on high until the mixture is completely smooth and no lumps remain.
  3. Pour the blended mixture onto the prepared baking sheet. Use a spatula to spread it into a rectangular or oval shape, keeping it about 1/4 inch thick. Try to make the thickness as even as possible for uniform baking.
  4. Place the baking sheet in the oven and bake for 25 to 30 minutes. The edges should be golden brown, and the center should be firm to the touch. The flatbread will puff up slightly while baking but will settle as it cools.
  5. Remove the flatbread from the oven. Spread the pizza sauce evenly over the crust, then sprinkle the shredded mozzarella and add your desired toppings. Be careful not to overload it with heavy toppings so the crust stays crisp.
  6. Return the pizza to the oven and bake for another 5 to 8 minutes, or until the cheese is melted and bubbly. For a crispier top, you can broil it for the last 60 seconds.
  7. Let the pizza rest for about 2 to 3 minutes before slicing. This allows the base to set further, making it easier to pick up and eat. Garnish with fresh basil if desired.
