  • 1/4 cup unsweetened cocoa powder
  • 34 tablespoons maple syrup or honey (adjust to taste)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup mini semi-sweet chocolate chips
  • A pinch of sea salt

Instructions

  1. Place the cottage cheese into a high-powered blender or food processor. Blend on high for about 1 to 2 minutes until the mixture is completely smooth and no curds remain. This is the most important step for achieving a “batter” texture.
  2. Add the cocoa powder, maple syrup or honey, vanilla extract, and a pinch of salt to the blender. Pulse or blend on low until the cocoa is fully incorporated and the mixture is a deep, chocolatey brown.
  3. Take a small taste of the mixture. If you prefer a sweeter dip, add an extra tablespoon of your chosen sweetener and blend briefly to combine.
  4. Transfer the smooth mixture into a serving bowl. Use a spatula to gently fold in the mini chocolate chips. This adds a lovely crunch that mimics the texture of real brownie batter.
  5. While you can eat it immediately, the flavors meld together beautifully if chilled in the refrigerator for at least 30 minutes before serving. This also allows the dip to thicken slightly.
