- 1/2 cup rolled oats
- 1/2 ripe banana
- 1/4 cup cottage cheese
- 1 egg
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- A pinch of salt
- 1 tbsp maple syrup or honey (optional)
- 1 tbsp walnuts or chocolate chips (optional)
Instructions
- Start by preheating your oven to 350°F (175°C). While the oven warms up, lightly grease a small oven-safe ramekin or baking dish with cooking spray or a little bit of coconut oil to prevent sticking.
- In a high-speed blender or food processor, combine the rolled oats, ripe banana, cottage cheese, egg, baking powder, vanilla extract, cinnamon, salt, and your sweetener of choice. Blend on high until the mixture is completely smooth and resembles a thick pancake batter.
- Pour the blended batter into your prepared baking dish. If you are using optional toppings like chopped walnuts or chocolate chips, sprinkle them evenly over the top of the batter. You can also add a few extra thin slices of banana for decoration.
- Place the dish in the center of the oven and bake for 25 to 30 minutes. The oats are done when the top is golden brown, the edges are firm, and a toothpick inserted into the center comes out clean. Let it cool for 2-3 minutes before serving.
