- 8 oz (225g) Fettuccine or your favorite pasta shape
- 1 cup Low-fat or full-fat cottage cheese
- 1/4 cup Freshly grated Parmesan cheese
- 1/4 cup Low-fat milk (or pasta water)
- 1 clove Garlic, minced
- 1/2 teaspoon Garlic powder
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
- A pinch of red pepper flakes (optional)
Instructions
- Step 1: Cook the Pasta. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until it is al dente. Before draining, reserve about half a cup of the starchy pasta water to help thin out the sauce if needed.
- Step 2: Blend the Alfredo Sauce. While the pasta is cooking, place the cottage cheese, Parmesan cheese, milk (or pasta water), minced garlic, garlic powder, salt, and pepper into a high-speed blender or food processor. Blend until the mixture is completely smooth and creamy with no visible lumps.
- Step 3: Combine and Heat. Drain the pasta and return it to the pot over very low heat. Pour the blended cottage cheese mixture over the hot pasta. Toss gently to coat every strand. If the sauce is too thick, add a tablespoon of the reserved pasta water at a time until you reach your desired consistency.
- Step 4: Garnish and Serve. Once the sauce is warmed through and the pasta is well-coated, remove from heat immediately. Serve in warm bowls and garnish with fresh parsley, extra Parmesan, and a crack of black pepper if desired.
