- 2 cups corn (fresh or frozen)
- 2 cups yellow squash, sliced
- 1 cup onion, chopped
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup milk
- 2 large eggs
- 1 cup breadcrumbs
- Salt and pepper to taste
- 2 tablespoons butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the corn, sliced yellow squash, chopped onion, shredded cheese, milk, eggs, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Pour the mixture into a greased casserole dish, spreading it out evenly. Top with breadcrumbs and drizzle with melted butter.
- Bake for 30-35 minutes or until the top is golden brown and the casserole is set. Allow to cool slightly before serving.
Notes
For added flavor, sauté onions before mixing, and experiment with different cheeses. To make gluten-free, use crushed gluten-free crackers instead of breadcrumbs.
