- 1 tablespoon olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 2 cups vegetable broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until the onion is translucent.
- Add broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for about 10 minutes until the broccoli is tender.
- Stir in heavy cream and bring the mixture to a gentle simmer.
- Use an immersion blender to blend the soup to your desired consistency. Stir in shredded cheddar cheese until melted. Season with salt and pepper to taste. Serve hot.
