A deliciously comforting curry that combines tender beef with creamy coconut milk, perfect for any occasion.


Ingredients

  • 1 lb beef, cut into cubes
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons vegetable oil
  • 1 cup beef broth
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until it turns translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger to the pot. Cook for another minute until fragrant.
  3. Stir in the curry powder and cook for one minute. Add the beef cubes, cooking until browned on all sides, about 5-7 minutes.
  4. Pour in the coconut milk and beef broth, then add the soy sauce. Season with salt and pepper to taste. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 90 minutes, until the beef is tender.
  5. Serve hot, garnished with fresh cilantro.

Notes

For extra flavor, marinate the beef in curry powder and soy sauce before cooking. Adjust spice level as desired.
