Description

A juicy, tender prime rib roast infused with aromatic herbs, perfect for holiday gatherings.


Ingredients

  • 1 prime rib roast (approximately 46 pounds)
  • Salt
  • Freshly ground black pepper
  • 4 cloves of garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • 1 cup beef broth

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper to form an herb paste.
  3. Rub the herb paste all over the prime rib roast and place it on a rack in a roasting pan.
  4. Roast the prime rib at 450°F for 20 minutes.
  5. Reduce the oven temperature to 325°F (163°C) and cook for about 1.5 to 2 hours, using a meat thermometer to check for doneness (aim for 135°F for medium-rare).
  6. Let the roast rest for at least 20 minutes before slicing.
  7. Slice and serve with beef broth drizzled on top.
