Description

Soft, fluffy muffins with classic cinnamon roll flavors and a protein boost, perfect for breakfast or snacks.


Ingredients

  • 1 cup gluten-free flour
  • 1/2 cup protein powder
  • 1/4 cup sugar or sweetener of choice
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup or honey
  • Optional glaze: powdered sugar and water

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the gluten-free flour, protein powder, sugar, baking powder, cinnamon, and salt in a large bowl.
  3. Combine the applesauce, almond milk, vanilla extract, and maple syrup in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter among the muffin cups, filling each about 2/3 full.
  6. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool slightly before transferring to a wire rack and drizzle with glaze if desired.
