- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- 1 cup powdered sugar
- 2–3 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the flour, baking soda, and salt.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Gradually add the flour mixture to the wet mixture, mixing until just combined.
- In a small bowl, mix together the cinnamon and sugar for the filling.
- Roll the dough out into a rectangle on a floured surface and sprinkle with the cinnamon-sugar mixture before rolling it into a log.
- Slice the roll into 1/2 inch cookies and place them on the baking sheet.
- Bake for 10-12 minutes or until edges are lightly golden.
- While cooling, mix powdered sugar and milk to create a glaze, then drizzle over cookies.
Notes
Store leftovers in an airtight container at room temperature for up to 4 days, or refrigerate for up to a week.
