- 1/2 cup chopped dates
- 1/2 cup boiling water
- 1/4 cup unsalted butter, softened
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons cocoa powder
- 1/4 cup chocolate chips (optional)
- Toffee sauce (for serving)
Instructions
- Preheat your oven to 350°F (175°C) and grease two ramekins.
- Soak the chopped dates in boiling water for about 10 minutes.
- Cream together the softened butter, brown sugar, and granulated sugar until fluffy. Beat in the egg and vanilla extract. Stir in the soaked dates.
- In another bowl, whisk together the flour, baking soda, salt, and cocoa powder. Gradually fold the dry ingredients into the wet mixture. Fold in chocolate chips if using.
- Divide the batter evenly between the ramekins. Bake for 20-25 minutes, or until a toothpick comes out clean.
- Serve warm, drizzled with toffee sauce on top.
Notes
For a vegan option, use a flaxseed replacement for the egg and plant-based butter.
