Ingredients

  • 1/2 cup chopped dates
  • 1/2 cup boiling water
  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons cocoa powder
  • 1/4 cup chocolate chips (optional)
  • Toffee sauce (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two ramekins.
  2. Soak the chopped dates in boiling water for about 10 minutes.
  3. Cream together the softened butter, brown sugar, and granulated sugar until fluffy. Beat in the egg and vanilla extract. Stir in the soaked dates.
  4. In another bowl, whisk together the flour, baking soda, salt, and cocoa powder. Gradually fold the dry ingredients into the wet mixture. Fold in chocolate chips if using.
  5. Divide the batter evenly between the ramekins. Bake for 20-25 minutes, or until a toothpick comes out clean.
  6. Serve warm, drizzled with toffee sauce on top.

Notes

For a vegan option, use a flaxseed replacement for the egg and plant-based butter.
