Description

Sweet, creamy, and utterly delicious, Chocolate Pumpkin Butter Cups are a delightful treat that perfectly marries the warm spices of fall with the rich indulgence of chocolate.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 cup chocolate chips
  • 2 tbsp coconut oil

Instructions

  1. In a bowl, mix together pumpkin puree, peanut butter, maple syrup, vanilla extract, and pumpkin pie spice until smooth.
  2. Melt the chocolate chips and coconut oil together in a double boiler or microwave until completely smooth.
  3. Line a muffin tin with cupcake liners and pour a small amount of melted chocolate into each liner, just enough to cover the bottom. Let the chocolate set in the fridge for about 10 minutes.
  4. Once set, spoon the pumpkin filling into each chocolate cup, leaving space at the top. Pour the remaining melted chocolate over the pumpkin filling to cover it completely. Freeze for at least 30 minutes until solid. Enjoy your Chocolate Pumpkin Butter Cups!
