Ingredients

- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups chocolate chips
- 1 cup chopped pistachios
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy. Add vanilla extract and eggs, beating each in individually.
- In another bowl, whisk together flour, baking soda, and salt. Gradually stir this into the wet ingredients until combined. Fold in the chocolate chips and pistachios.
- Drop mounds of cookie dough onto ungreased baking sheets. Bake for 10-12 minutes until edges are golden brown. Allow to cool before transferring to wire racks.
Notes
For even baking, use a cookie scoop. Store cookies in an airtight container for up to one week or freeze for up to three months.
