- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground cardamom
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine pumpkin puree, maple syrup, vegetable oil, and eggs; whisk until smooth.
- In another bowl, whisk together all-purpose flour, baking soda, salt, and spices.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined; fold in nuts if using.
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Enjoy with butter or cream cheese; pairs well with chai tea or coffee. Can be stored at room temperature for up to 3 days or frozen for up to 3 months.
