Description
A healthy twist on traditional fried rice, using cauliflower rice and packed with protein and vegetables.
Ingredients

- 2 cups cauliflower rice
- 1 cup diced cooked chicken
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons green onions, chopped
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large skillet over medium heat.
- Add the cauliflower rice and mixed vegetables; stir-fry for about 5 minutes until tender.
- Push the mixture to one side of the skillet and pour the beaten eggs into the other side; scramble until fully cooked.
- Once the eggs are cooked, combine them with the cauliflower rice mixture.
- Add the diced chicken and soy sauce; stir for another 2-3 minutes until everything is heated through.
- Season with salt and pepper, and garnish with green onions before serving.
Notes
Use fresh cauliflower rice for the best texture and feel free to customize your vegetables.
