- 3–4 pounds beef chuck roast
- 4 large onions, thinly sliced
- 2 cups beef broth
- 1 cup French onion soup
- 2 tablespoons olive oil
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized, about 20-30 minutes.
- Season the beef chuck roast with salt and pepper on all sides. In a large pot or Dutch oven, sear the roast on all sides until browned.
- Once the roast is browned, remove it from the pot and set it aside. Add the caramelized onions back into the pot.
- Pour in the beef broth and French onion soup, and stir in the Worcestershire sauce. Return the seared roast to the pot, cover it, and cook on low heat for 4-6 hours, or until the meat is tender.
- Once done, remove the roast from the pot and let it rest before slicing.
- Serve with the onion sauce and garnish with fresh thyme if desired.
Notes
For a richer flavor, use homemade beef broth. Feel free to add garlic or mushrooms for additional flavor.
