Description

Savory and satisfying, Buffalo Chicken Stuffed Sweet Potatoes combine the spicy kick of buffalo chicken with the natural sweetness of roasted sweet potatoes.


Ingredients

  • 4 sweet potatoes
  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly to remove any dirt, pierce each several times with a fork, rub with olive oil, and sprinkle with salt and pepper.
  2. Place the sweet potatoes on a baking sheet and bake for 45-60 minutes until tender when pierced with a fork.
  3. Combine the shredded cooked chicken with buffalo sauce in a mixing bowl, stirring until fully coated.
  4. Remove the sweet potatoes from the oven, let cool, cut in half lengthwise, fluff insides with a fork, and spoon the buffalo chicken mixture into each half. Top with shredded cheese and return to the oven for 5-10 minutes until cheese melts and is bubbly.
  5. Garnish with sliced green onions before serving.
