- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup buffalo sauce
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Celery sticks (for serving)
- Ranch or blue cheese dressing (for serving)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cauliflower florets with olive oil, garlic powder, paprika, salt, and pepper in a large bowl.
- Bake in the oven for 20 minutes until tender and slightly crispy.
- Season the chicken pieces with salt and pepper and cook in a skillet until fully cooked (about 6-8 minutes).
- Combine the cooked chicken with the baked cauliflower and toss with buffalo sauce.
- Serve with celery sticks and ranch or blue cheese dressing on the side.
Notes
For extra crunch, leave space between cauliflower florets while baking to prevent steaming.
