Description

A delightful twist on traditional game day snacks, combining crispy cauliflower and juicy chicken in zesty buffalo sauce.


Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup buffalo sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Celery sticks (for serving)
  • Ranch or blue cheese dressing (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cauliflower florets with olive oil, garlic powder, paprika, salt, and pepper in a large bowl.
  3. Bake in the oven for 20 minutes until tender and slightly crispy.
  4. Season the chicken pieces with salt and pepper and cook in a skillet until fully cooked (about 6-8 minutes).
  5. Combine the cooked chicken with the baked cauliflower and toss with buffalo sauce.
  6. Serve with celery sticks and ranch or blue cheese dressing on the side.

Notes

For extra crunch, leave space between cauliflower florets while baking to prevent steaming.
