- 2 pounds of bones (beef, chicken, or pork)
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2–3 cloves of garlic, smashed
- 2 tablespoons apple cider vinegar
- Water
- Salt and pepper to taste
- Optional herbs (like thyme, bay leaf, parsley)
Instructions
- Place the bones in a large pot or slow cooker.
- Add the onion, carrots, celery, garlic, and any optional herbs to the pot.
- Pour in water to cover the bones and vegetables. Add the apple cider vinegar and let it sit for 30 minutes. Then, bring to a boil and reduce to a simmer. Simmer for at least 12 hours (up to 24 hours for beef bones).
- Strain the broth through a fine-mesh sieve and discard the solids. Season with salt and pepper to taste. Let it cool and store in jars in the refrigerator or freeze for later use.
Notes
For richer flavor, use a variety of bones including knuckles, joints, and marrow bones. Skim off foam that rises to the top for a clearer broth.
