Description

A delightful blueberry cake that marries simplicity with the brightness of fresh blueberries, perfect for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with the milk.
  6. Gently fold in the blueberries.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool before serving.

Notes

For a zesty kick, add lemon zest or substitute half the blueberries with raspberries.
