- 1 cup collard greens, chopped and cooked
- 1/2 cup breadcrumbs
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 egg, beaten
- Oil for frying
Instructions
- In a large bowl, combine black-eyed peas, collard greens, breadcrumbs, onion, garlic, cumin, salt, and black pepper. Mix well.
- Add the beaten egg to the mixture. Stir until thoroughly combined.
- Form the mixture into small patties. Heat oil in a frying pan over medium heat.
- Fry until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels and serve warm.
