Instructions

- Next, stir in the drained black beans, cooked quinoa or brown rice, corn, cumin, chili powder, salt, and pepper. Continue cooking for a few more minutes until everything is heated through and flavors meld.
- Take a large tortilla and place a generous portion of the black bean mixture in the center. If you’re using cheese, sprinkle it on top before rolling. Carefully fold in the sides and roll it up tightly, ensuring all filling is encased.
