Ingredients

- 2 cups long-grain parboiled rice
- 4 cups chicken broth or water
- 1/4 cup vegetable oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 tomatoes, blended
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- 1 teaspoon curry powder
- Salt and pepper to taste
- Optional: protein (chicken, shrimp, etc.)
Instructions
- Rinse the rice under cold water until it runs clear, then drain and set aside.
- In a pot, heat the vegetable oil over medium heat. Add the chopped onions and bell pepper; sauté until soft, about 5 minutes.
- Add the blended tomatoes and tomato paste to the pot and cook for about 10 minutes, stirring occasionally, until the sauce thickens.
- Stir in the thyme, curry powder, salt, and pepper. Mix in the rinsed rice, ensuring it is coated with the sauce.
- Pour in the chicken broth or water and bring to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes until the rice is tender and liquid absorbed.
- Fluff the rice with a fork and let it sit for a few minutes before serving. Optionally, add your choice of cooked protein.
Notes
Serve with grilled chicken, shrimp, or fried plantains. Store leftovers in an airtight container in the refrigerator.
