- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon grated orange zest
- 1/2 cup fresh orange juice
- 1 cup fresh or frozen cranberries, halved
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another large bowl, beat the softened butter and sugar together until fluffy. Add the eggs one at a time, followed by the grated orange zest and orange juice, mixing well after each addition.
- Gradually add the dry ingredients to the wet mixture until just combined. Gently fold in the halved cranberries and nuts if using.
- Pour the batter into the prepared loaf pan. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Serve warm with a pat of butter or a dollop of cream cheese. For a festive touch, dust with powdered sugar or drizzle with orange glaze.
