- 2 tsp baking powder

- 1/2 tsp ground ginger

- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup milk
- 2 cups ripe pears, diced
- 1 cup mixed nuts, chopped
Instructions
- Preheat the oven to 350°F (175°C) and grease your loaf pan.
- In a mixing bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Whisk until well-mixed.
- In a separate bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla and milk until smooth.
- Gradually add dry mixture to wet mixture, stirring until just combined. Fold in pears and nuts.
- Pour batter into prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use overripe pears for enhanced sweetness; feel free to adjust spices to taste.
