- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 pound ground beef (or turkey)
- 2 cans (15 oz) kidney beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup beef or vegetable broth
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion, garlic, and bell pepper; sauté until softened, about 5 minutes.
- Add the ground beef (or turkey) into the pot. Cook until browned, breaking it apart with a spoon for about 7 to 10 minutes.
- Stir in the kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper. Pour in the broth and bring to a boil over high heat.
- Reduce the heat and let the chili simmer for at least 30 minutes, stirring occasionally. Adjust seasoning as needed, then serve hot.
Notes
For a smoky flavor, consider adding smoked paprika or diced chipotle peppers. To thicken the chili, simmer uncovered or mash some beans.
