  • Total Time: 15 minutes
  • Diet: Vegetarian

Ingredients

Scale
  • 1/2 cup fresh berries (strawberries, blueberries, or raspberries)
  • 1/2 cup cucumber slices or baby carrots
  • 1 large hard-boiled egg, peeled and halved
  • 1/4 cup raw almonds or walnuts
  • 2 tablespoons hummus or almond butter
  • 1 ounce sharp cheddar cheese, cubed
  • 56 whole-grain crackers or mini pretzels

Instructions

  1. Prep the Produce: Wash your berries and vegetables thoroughly under cold water. Pat them completely dry with a paper towel to ensure they don’t make the other items in the box soggy. Slice the cucumbers or carrots into bite-sized pieces that fit easily into the compartments.
  2. Prepare the Protein: If you haven’t already, boil your egg for about 9-10 minutes for a firm yolk. Once cooled and peeled, slice it in half. You can sprinkle a little salt or pepper on top for extra flavor. If you prefer meat, you could also roll up a slice of turkey or ham.
  3. Arrange the Compartments: Place the heavier or larger items like the cheese cubes and hard-boiled egg in the main sections. Use silicone muffin liners if your bento box doesn’t have enough built-in dividers; this helps keep the nuts and crackers separate from the moist produce.
  4. Add the Dip: Place your hummus or nut butter into a small, leak-proof container within the bento box. This prevents the dip from spreading onto your crackers and keeps everything neat and tidy.
  5. Final Assembly: Fill the remaining gaps with your berries, nuts, and crackers. Ensure the lid fits tightly so that the items stay in their designated spots during transport. Your snack box is now ready to go!
