- 1 cup old-fashioned rolled oats
- 1/2 cup creamy peanut butter (or almond butter)
- 1/3 cup honey or maple syrup
- 1/2 cup ground flaxseed or chia seeds
- 1/2 cup mini dark chocolate chips
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
Instructions
- In a large mixing bowl, add the rolled oats, ground flaxseed or chia seeds, mini chocolate chips, and salt. Stir these dry ingredients together until they are well distributed.
- Pour the creamy peanut butter, honey (or maple syrup), and vanilla extract into the bowl with the dry mixture. Ensure your peanut butter is at room temperature so it is easier to stir.
- Using a sturdy spatula or a wooden spoon, mix everything together until a sticky dough forms. Make sure the oats are completely coated by the nut butter and sweetener so the balls hold their shape.
- Scoop about one tablespoon of the mixture at a time and roll it between your palms to form a ball about one inch in diameter. Repeat this process until all the dough is used, which should yield about 12 balls.
- Place the formed protein balls on a plate or tray lined with parchment paper. Put them in the refrigerator for at least 30 minutes. This helps them firm up and ensures they don’t fall apart when you pack them in your bento box.
