- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, chopped
- 2 garlic cloves, minced

- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C). Cut the tops off the poblano peppers and remove the seeds to prepare them for stuffing.
- In a skillet over medium heat, cook the ground beef along with the chopped onion and minced garlic. Stir occasionally until the beef is browned and the onions are translucent.
- Stir in the cooked rice, canned diced tomatoes, cumin, and season with salt and pepper to taste. Mix everything thoroughly to combine the flavors, allowing it to simmer for a few minutes.
- Stuff the cooked beef and rice mixture generously into the prepared poblano peppers. Place the stuffed peppers in a baking dish and top them with shredded cheese. Bake for 25-30 minutes until the peppers are tender and the cheese is melted and bubbly. Before serving, garnish with fresh cilantro for added flavor and freshness.
