- 2 barramundi fillets
- 3 tablespoons honey
- 2 tablespoons harissa paste
- 1 lemon, sliced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- Olive oil
- Salt and pepper to taste
- Fresh herbs (such as parsley or cilantro) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Combine honey and harissa paste in a mixing bowl until well blended.
- Place the barramundi fillets in a baking dish and brush the honey-harissa mixture generously over them.
- Add the sliced bell pepper and zucchini around the fish, and drizzle with olive oil. Season with salt and pepper to taste.
- Layer lemon slices on top of the fish for added flavor.
- Bake in the oven for about 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Garnish with fresh herbs before serving.
Notes
Serve hot with couscous or a fresh green salad. The flavors develop beautifully in leftovers.
