Description

A vibrant and flavorful dish that combines succulent chicken, hearty vegetables, and a spicy-sweet sauce over fluffy rice.

Ingredients

Scale
  • 1 pound chicken breast, sliced
  • 1 cup rice (white or brown)
  • 1 cup mixed vegetables (like bell peppers, broccoli, and carrots)
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Instructions

  1. Start by cooking the rice according to package instructions. This usually takes about 15 minutes, so you can multitask while it cooks!
  2. In a medium bowl, combine 1/4 cup mayonnaise, 2 tablespoons sriracha sauce, 1 tablespoon honey, 1 tablespoon soy sauce, and 2 teaspoons sesame oil. Stir until creamy and smooth to create the delicious Bang Bang sauce.
  3. Season the sliced chicken with salt and pepper. In a skillet over medium heat, cook the chicken for about 5-7 minutes, or until it’s cooked through and golden brown.
  4. In the same skillet, add your mixed vegetables. Sauté them for about 3-4 minutes until they are tender but still crisp, maintaining their vibrant colors and nutrients.
  5. Combine the cooked chicken and sautéed vegetables with the Bang Bang sauce. Stir everything well until the chicken and vegetables are evenly coated with the sauce.
  6. Serve the chicken and vegetable mixture over the fluffy rice. Garnish with green onions and a sprinkle of sesame seeds for an added crunch.
