- 2 cups grated zucchini
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract

- 1 teaspoon ground cinnamon
- 1/2 cup chopped walnuts (optional)

- 1/4 cup cold butter (for streusel)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, combine the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth.
- In a separate bowl, whisk together flour, baking soda, baking powder, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet mixture and fold in walnuts if desired.
- For the streusel, combine brown sugar, rolled oats, ground cinnamon, and cold butter, mixing until crumbly.
- Pour half of the batter into the prepared loaf pan, sprinkle half of the streusel on top, add the remaining batter, and finish with the rest of the streusel.
- Bake for 50-60 minutes until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Serve warm with butter or honey. Pairs well with coffee or tea.
