Ingredients

  • 1 lb chicken breast, cut into strips
  • 1 cup crushed pecans
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 eggs, beaten
  • 1/4 cup honey mustard (for dipping)
  • Cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the crushed pecans, breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  3. Dip each chicken strip in the beaten eggs, then coat in the pecan mixture, pressing gently to adhere.
  4. Place the coated chicken fingers on the prepared baking sheet. Lightly spray the tops with cooking spray. Bake for 15-20 minutes or until the chicken is cooked through and the coating is golden.
  5. Serve with honey mustard for dipping.

Notes

For extra crunch, consider adding a tablespoon of cornmeal to the pecan mixture. You can also use almonds or walnuts instead of pecans.
