- 1 lb chicken breast, cut into strips
- 1 cup crushed pecans
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 eggs, beaten
- 1/4 cup honey mustard (for dipping)
- Cooking spray
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix the crushed pecans, breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Dip each chicken strip in the beaten eggs, then coat in the pecan mixture, pressing gently to adhere.
- Place the coated chicken fingers on the prepared baking sheet. Lightly spray the tops with cooking spray. Bake for 15-20 minutes or until the chicken is cooked through and the coating is golden.
- Serve with honey mustard for dipping.
Notes
For extra crunch, consider adding a tablespoon of cornmeal to the pecan mixture. You can also use almonds or walnuts instead of pecans.
