Description

These Apricot Protein Crumble Bars are a delicious and nutritious snack, perfect for any time of the day, packed with protein and featuring the sweet flavor of apricots.

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 cup dried apricots, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish to prevent the bars from sticking.
  2. In a large bowl, mix the rolled oats, almond flour, protein powder, salt, and cinnamon until they are well combined.
  3. Combine the honey (or maple syrup) and melted coconut oil in another bowl. Mix this wet mixture into the dry ingredients until everything is thoroughly combined. Stir in the chopped apricots and nuts, if using. Press the mixture firmly into the prepared baking dish and smooth the top to create an even layer. Bake for 20-25 minutes or until the edges are lightly golden.
  4. Let the bars cool completely in the dish before cutting them into squares or rectangles. This cooling step is crucial as it helps to firm up the texture.

Notes

Store in an airtight container at room temperature for up to 5 days or in the refrigerator for up to two weeks. Freeze for up to three months wrapped tightly in plastic wrap.
