- 4 Salmon fillets
- 1/2 cup Apricot preserves
- 1/4 cup Soy sauce
- 2 cloves Garlic (minced)
- 1 inch Ginger (grated)
- 2 tablespoons Olive oil
- Salt (to taste)
- Pepper (to taste)
- 2 tablespoons Lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- Combine apricot preserves, soy sauce, garlic, ginger, and lemon juice in a bowl; stir until blended.
- Arrange salmon fillets on a baking sheet lined with parchment paper.
- Brush the apricot mixture generously over the fillets; drizzle with olive oil and season with salt and pepper.
- Bake for 12-15 minutes or until salmon is cooked through and flakes easily with a fork.
- Serve hot, garnished with lemon wedges if desired.
Notes
For thicker glaze, simmer apricot mixture before applying to salmon. Use gluten-free soy sauce for gluten-free version.
