Ingredients

  • 4 Salmon fillets
  • 1/2 cup Apricot preserves
  • 1/4 cup Soy sauce
  • 2 cloves Garlic (minced)
  • 1 inch Ginger (grated)
  • 2 tablespoons Olive oil
  • Salt (to taste)
  • Pepper (to taste)
  • 2 tablespoons Lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine apricot preserves, soy sauce, garlic, ginger, and lemon juice in a bowl; stir until blended.
  3. Arrange salmon fillets on a baking sheet lined with parchment paper.
  4. Brush the apricot mixture generously over the fillets; drizzle with olive oil and season with salt and pepper.
  5. Bake for 12-15 minutes or until salmon is cooked through and flakes easily with a fork.
  6. Serve hot, garnished with lemon wedges if desired.
